Gorgeous cake and unique to us

How can it be a year since lovely Nikita and Cam got married in beautiful Beddgelert? So I made them a cute anniversary cake to celebrate their first year of being married.

Spiced carrot cake, of course. I use Mary Berry’s recipe which is difficult to beat.

Nikita & Cam’s Wedding Cake - last May - was a 12” spiced carrot cake covered in pastel piped buttercream and matching handcut flowers.
