Hooray for Daffodil month

“Everyone loved the cake, it went down a real treat”

Spring is my favourite. Anyone else. And putting daffodils on a cake is just everything.

Daffodils symbolize rebirth, new beginnings, hope and joy, which makes them the perfect feature flower for my spring cakes.

I couldn’t have been happier when my customer asked for these 3D daffodils around the side of her Mam’s special 80th cake. I baked a large vanilla sponge with buttercream and raspberry jam to serve the 25 guests at her gathering.

If you think sugar paste daffodils are easy to throw together - I can confirm they’re not! But they are well worth the effort. Each bloom has handcut leaves and tiny blossoms to match the spring shades of the cake. The final touch was a kaleidoscope of butterflies (yes, that’s the collective noun) fluttering across the top of the cake.

So - Happy St David’s Day to the many of us blessed to live in Wales, or visit regularly.
